A roadside taco stand near Santa Fe Street and Clairborne Road is attracting plenty of attention, with long lines of customers gathering beneath brightly lit red tents for freshly prepared Mexican street food.

The business, Tacos La Poblanita, has set up an outdoor cooking operation in the parking lot near Church’s Chicken and the former Big Lots. Its biggest attraction is a towering vertical spit of marinated pork, slowly roasting over an open flame for traditional tacos al pastor. Nearby, workers prepare steak, chicken and other specialty meats on sizzling grills, serving tacos with fresh onions, cilantro, limes and a variety of salsas.

Olathe Today visited the stand and spoke with the vendors, who said they came from Los Angeles and have been in the area for approximately three months. Tacos are $4 each, with customers lining up to watch their meals prepared right in front of them.

The operation has become a curiosity along the busy Santa Fe corridor, particularly after dark when the glowing tents, open flames and crowds are hard to miss.
